I will have to fab mounts(struts???,dont know proper term). What is the minimum size and grade you should use? This would be on the bike side(pivot mounting points).

Size depends upon the type of connection and the size and weight of the sidecar.
Some of the lighter cars with clevis and eye connections use 12mm or 1/2" SAE bolts and nuts at all 4 points. The recommended grade would be 8.8 metric or grade 8 SAE rating.
Some other sidecars will use heim joint (rod end) lower mounts with 3/4" grade 8 bolts and nuts and utilize clevis and eye bolts with 3/8" grade 8 bolts and nuts for the upper struts.
Make sure and use matching grade nuts and bolts with all connections.
When in doubt, Make it stout!
