Your new 195/55-16 1.64" smaller then regular 160/80-16. Make sure you check alignment of your rig.
I did not use Champion's EZ Steer for my triple tree project, but it is best modification i did on my rig.
Good locksmith can pick your lock.

It is no advantage to paying the big $$ for the Tires available with all the technology for better cornering and sidewall technology for sidecar use.
