I am seeking any advice as to installing a enclosed/ foldown canvas top on my Hitchhiker. I do not know the year of the hack as I bought this past spring with the bike.

You may try a MARINE/Boat canvass place. They make all sorts of covers for all kinds of craft.
Lets see some photos of your rig.

Check with an auto upholstery shop , if they make car convertible tops they should be able to make one from scratch for your hack.
